MCAD is inherited I believe, so unless I have it (never had the symptoms) I should be fine?

No, it is not necessarily inherited. It can be caused by bacterial infections, viruses, parasites, mold exposure, chemical exposure, etc. Many possible causes.
Mast Cell Activation Syndrome (MCAS), Salicylate Sensitivity,  Interstitial Cystitis,  gluten intolerance, Raynaud's, Sjogren's, A-fib; cytomegalovirus, mycoplasma,  recovered from Lyme disease
