How about some summer recipes??

I just dug out an old recipe book to find the recipe for something that I used to make years ago. I was hungry for it this summer.

I found the recipe and it really doesn't need one---just mix in what you like.

I make chicken salad with a can of the chicken breast from Sams Club. It comes 5 cans for about 10 bucks and is very fat free and is good firm meat. I also cut up a couple of hard boiled eggs in with it. Also, when the urge hits I have been known to add some salmon. I used the salmon in the aluminum packages that you find in with the other canned tuna. The small package is just the right size and not so spend.

You can also chop up celery, onions for sure and could add chopped olives, pimento, red peppers, etc. whatever you want. Mix well dry with the spices of your choice and add the Miracle Whip. I usually add milk to my Miracle whip plus some sugar and this thins it down and it doesn't taste so oily. Then you add the canned shoestring potatoes on top and can also stir some in if you like.

I generally just serve up each portion and place the potatoes on top and let people mix their own. This is so great on a hot day and the saltiness off it hits the spot when we have been perspiring so much. Some of you "older" gals may remember this but I bet that a lot of the younger gals haven't had this. Kids usually like this also. If you mix the shoestring potatoes in with the batch of salad they get soggy overnight but it is still good and makes yummy sandwiches.

You want easy? Get a roasted chicken, eat some of it, and mix the rest in the potato salad that you also got at Sam's. Add cumin. It needs to be the type without mustard, for my taste.

Be sure to put the skin in the potato salad for the seasoning.

Not really a recipe but, it has been hot here so we are cooking thing on the stove. No turning the oven on.

We are making things like grilled cheese and salad, chicken cesear wraps, and tonight we had breakfast for dinner. I love pancakes when blueberries are in season!

I usually cook late at night and then nuke the stuff the next day. No turning on the stove allowed!

However, it will be cool and rainy tomorrow! Time to make some taco meat (3 lbs worth) and freeze it. And maybe some meat balls. I cook a lot and then freeze it for later use.

Shoestring potatoes are canned skinny sticks that are in flavor the equivalent of potato chips, and Miracle Whip is a lightly seasoned mayonnaise sold here in the U.S. You could easily substitute potato chips, or French Fried onions.

Sometimes life gets dull....

Every so often when my kids were young I would surprise them with "Breakfast for Dinner"

It has been hot and humid...so time for fun

Pancakes layered with fresh fruit ...peaches, blueberries and strawberries
Peaked dollop of chocolate whipped cream....and just a drizzle of maple syrup.

Adults can feel like children again...lol

Not gluten or dairy friendly at all, but I love tortilla roll-ups during the summer.

10 pack large flour tortillas
1 block cream cheese
16 oz. sour cream
2 cups shredded cheese
green onions (chopped finely)
black olives  (chopped finely)
garlic powder to taste
dash of salt
dash of pepper


Mix all together and then spread thinly on tortilla.  Roll up the tortilla like a log and wrap each one in wax paper or plastic wrap so they don't stick to each other.  I usually get all 10 out of the mix if I spread really thin.  Refrigerate 4-5 hours or overnight and then slice each one.  It makes quite a bit as each one probably yields at least 10 pieces.  I take this during the summer to family events and I never bring any home.

I made grilled potato wedges, roasted root veggies and pulled pork sandwiches yesterday with gluten-free apple crisp for supper.  Not easy and majorly time consuming  :P cause I realized we were out of buns and bread so I made 4 dozen buns. I made my own blend of chili powder, garlic and onion powders, some pepper blend, brown sugar, bbq seasoning etc and rubbed it on the pork shoulder. I let that sit for a while. Then I roasted it for about 7 hours on low about 300.

Then I got some beets and turnips and zucchini, cut them into bite-size chunks, and tossed with olive oil. Roast at 375 or 400 about an hour.

I blanched some yukon gold potatoes for 3 minutes. Then I tossed them w olive oil and salt and pepper and roasted those as well.

Oh and I made sesame green beans.  Blanched the beans, (while I was doing the ones for winter, just put these aside) and then put them in the wok with about 1/2 an inch of water.  Steam off. Add some sesame oil and toasted sesame seeds. RIDICULOUSLY GOOD.

Yes the house heated up like crazy. Actually I did the veggies outside on the BBQ cause it got hot.

The apple crisp:  I had frozen apples in the freezer. Thawed them, added about 3/4 of a cup sugar (to your taste, it was a 9x13 pan) with a tsp of sugar and cornstarch, and a few dabs of butter and a dash of salt i with the sugar.  In a large mixing cup I put 1.5c oatmeal, .5cup gluten free all purpose flour baking mixture, .5c brown sugar, dash of cinnamon, and .5cup of melted butter tossed over. Mix until thoroughly mixed.  Pour over crisp (with the huge dish I did 1.5x the recipe).  Bake at 375 until done, about 45 minutes or so. (when you smell this it's just about done! Should be bubbling).  You can use that topping with regular flour for a non-gf crisp but my SIL need gf. Anyway it was ABSOLUTELY delicious. You can switch up the fruit to whatever is in season/available to you.  Rhubarb, peaches, blueberry, saskatoon, etc. Just adjust the sugar for those sweeter or less sweet, ie rhubarb needs more sugar than peach, etc.

Tonight I might try beer can chicken with ginger ale. :)

My SIL is visiting and we have 8 kids between us!  It is a lot of cooking.  Thank goodness for my big garden!

Everyone has such good ideas!!

We grill chicken breast a lot in summer on the outdoor gas grill, throw on some onions and mushrooms...yummy.
Add a lettuce/spinach salad and you're good to go. :)

We bake potatoes on the grill, too. They turn out so good!

Like you, 4Kids, we are lucky enough to have some garden veggies. The most we've grown for years, but we did manage to plant some broccoli for the first time and a few tomato plants.

One day I had no plan for dinner, so cooked up some fetticine, added a little fresh garlic and olive oil. Picked a couple tomatoes and cut some broccoli from the garden and tossed those in. Had some frozen precooked grilled chicken in the freeze I threw in and a few mushrooms and it was awesome!

I love the apple crisp recipe. Those are so easy and so delicious.

If I think of something more special that I've seen, I'll add it here.

My husband and I just went to Eastern WA for a weekend getaway - there's some amazing produce at fruit stands there this time of year. For $8 we came back with a 24-pound box of perfect peaches.

You can only eat so many of them fresh, so yesterday I sat down and cut most of them up - oh, the smell was AMAZING! It was a very pleasant chore...

Anyway - I had a GIANT bowl of peaches. I mixed 'em up with a little bit of (gluten-free) flour, a bit of corn starch, a bit of salt, some brown sugar, cinnamon, vanilla, and a generous splash of good bourbon.

Hubby brought home some frozen gluten-free pie crusts and I filled them up with peaches, then topped them with a oatmeal/brown sugar/butter crumble seasoned with a little hint of clove and some cardamom, and just a teensy pinch of salt.

OMG that was the best peach pie I have ever had.... and we have an extra to bring to a potluck tonight, and two huge ziplocks of pie filling in the freezer to use through the winter.

Ya gotta take advantage of this time of year when the produce is SO good and fresh!!!!
