Pizza Tonight!!!

well the family had pizza tonight,, I wasreduced to eating a can of chicken noodle soup,, SIGH,, Pizza did smell good though

I recently found some pre made eggplant sliced, already breaded and frozen.

So I made some eggplant parmesan that is to die for.

It is so hard to get really ripe and good eggplant consistently.

And all the work of slicing and taking out the moisture and then breading and frying....I'm worn out just writing all that down.

My husband is into making pizza and using the bread machine sounds like a great idea.

He insists on keep it, tho' if he makes bread we just EAT IT.

How's that for the punishment fitting the crime?

Shade,, I cook once a week.  Usually when I'm feeling good.  I have issues w/fingers and wrist on my right hand.  So I try not to do too much for too long or too often.  I eat a salad every day w/either tuna or salmon.  I'm trying to eat better all around.

The meatloaf was made of ground turkey(93/7).  And I LOVE roasted peppers.
