Well, tonight I made nachos. Chips, (beans for the hubby and kids), fajita chicken (already prepared - are you kidding?? ;), cheese, black olives and medium tomatillo salsa! :D

I did find something at a new grocery store by us - the butcher gets some flank steak (fajita meat), slices in in long strips, tenderizes the heck out of it, then rolls it. "Pin Wheels".  I sprinkle it with Chipotle seasoning before cooking. I usually don't eat a lot of red meat but when I do, it is this. It is so good. Tender.

I just had some broccoli and cheese soup...good for a winter night.

I made my dad's homemade (used chicken broth) turkey soup today. He made this every year after Thanksgiving. I just happened to cook a turkey yesterday.

One turkey ..ummm...carcas  ;D (with leftover meat on it)
3 cans of low fat chicken broth
3-4 qts water
1 onion, minced
5 stalks celery chopped, or sliced into bites size pcs
1 lb bag of baby carrots
*Other leftovers from the dinner
1 t. poultry seasoning
1 t. Thyme (optional)
1 t. Basil
1 Bay leaf (optional)
garlic powder
salt and pepper
Cooked rice

Place the turkey, bones and all, in a very large cook pot. Pour broth, water, about 2 T garlic powder, 1 T salt, and pepper. Simmer on med low for about 1 hour. reduce heat to low. Simmer for about 2 more hours. **BONE the pot. Remove the bay leaf. Add carrots, celery, onion, and * the leftovers. (My dad added stuffing (about 2 cups, adds  good flavor), and green beans. Simmer until veggies are tender, about an hour. Serve over rice.
You can add to it, or take away. The whole turkey adds a lot of flavor.

**I remove the large pieces of bones and meat. Then, I pour the liquid through a strainer into a large bowl. I bone the turkey, then add everything back to the large cook pot. If you don't have the strength to strain, you can use a slotted spoon to gather any smaller bones. I did this today.

I would love everyone else's recipe, too! :)

irish

I picked up 1 pound packages of hamb, turkey burg and seasoned ground pork saus and mixed the 3 together. I kept out enough for burgers for frying and froze the rest as patties for quick suppers.

Also had boiled potatoes and our newest favorite. I buy the finely chopped cabbage in the bags--88 cent special the other day. I mix mayo, olive oil, rice vinegar and sugar and beat the heck out of it. I also add a little bit of very, very finley chopped onion and scape juice off the onion also plus cilantro seasoning, tarragon and parsley flakes.

We are into this salad cause it seems to have just enough kick and is a "raw" veggie. I don't have a cooked veggie then. Cooked veggies get old. Irish ;D
