The Biggest Zucchini Ever

So my husband comes home last week and says he has something for me from his friend's garden.  I was not prepared for what he brought home.  This GINORMOUS zucchini was 2ft long and 8 inches in diameter at the thickest part!  I swore it was fake.  The friend is a prankster so I thought maybe it was a joke and when I went to cut it, it would be plastic or something, so I dug my nail in it and sure enough it was real.  He hadn't seen it growing in the corner and didn't know what to do with it, so he sent it to me.  So I stared at it in the fridge for the last 4-5 days.  Completely overwhelmed about what to do with it either.  I decided to make zucchini parmesan.  This one zucchini, even after deseeding it (the seeds were like pumpkin seeds in size and toughness) made TWO 13x9 pans of zucchini parm for tonight's dinner.  The zucchini itself was pretty tasteless, but when combined with the other ingredients (spaghetti sauce and cheese), it made a wonderful carrier for the flavors.  Even my kids who love to say they hate zucchini (usually with a mouthful of it ;), ate a huge plate each over pasta.

That was funny.  My hubby had a friend at work who grew a zucchini in a jar, while th plant is still young you stick it in a mason jar and leave it alone till it grows big, then cut the stem off and put the lid on and see if the kids figure it out.  It was funny to see!!

My mom would take the giants and cut them in half length-wise, scoop out the seeds, and stuff it with hamburger with rice in it. Then she put it in the electric skillet, covered it with tomato sauce and simmered. And simmered. And simmered. The rice cooked up nice and soft and the flavors were carried by the squash.

That said, I am not particularly fond of the stuff. However, apparently I am supposed to eat more, and someone planted a squash in my garden. In a month the danged thing is 4 feet long, with lots of blossoms. I have no idea what kind of squash it is.

However, it is a living thing and I can't bear to kill it. Sigh.

I hate it when someone brings us a million squash (plural).  There is only so much you can do with it and with only two of us, it gets old fast.  I even made 2 loaves of zuchinni bread last week.  My hubby was putting a couple of zuchinni out on the kitchen counter and hinting.  Well it was good, we froze one loaf but are into that already.

I let him know this won't happen a lot.  He is the cook/baker in the family.  The stuff I mixed up looked so bad, I could barely believe it would turn into such good tasting stuff.  The ingredients are hard to mix because they ar3 so stiff and are a nasty green.  I've done my duty.  Lucy

Lucy, Everyone has to pay their dues, don't they? I have a couple and have been thinking about making some gluten free zuchinni bread for my hubby.

I used to have a recipe for a chocolate zuchinni cake that was pretty good. No clue where it went to. Irish
