elimination diet-how do you know when u reintroduce a food if u have a reaction?

i am on a very strict elimination diet -repairvite..where i am gluten free and only eating fruits veggies and organic chicken and wildcaught fish... how do i know if i reintroduce a new food if my body reacts or not??  does anyone have experience with this??  will i get an allergic response in my eyes? or would it be a rash or something????
thanks to anyone who can help!!! i know some of you on here have done these types of diets... thanks again. :)

 a bad response would be any thing you HAVEN'T been experiencing to that point. It can be as varied as a GI upset, diarrhea constipation, rash, pronounced fatigue, joints aching more than usual for you, dryness worse, headaches , sleep problems etc. Really any NEW troublesome symptoms that happens after you ingest the food. This can take a period of sometimes a few days to see ( bodies take a time to digest the food and make any response to it known) so it is best to slowly reintroduce new foods so you will know which one is the offender.
Funny, usually in my line of work I am outlining this process for moms introducing their babies to solid  foods for the very first time! It really is the same thing only with adults

ok thank you so much.. its hard to tell cause i have been having major headaches from the allegies right-tree pollen..it lasts all day long... ughhh.thanks though!  and my eyes always fluctuate with dryness-up and down up and down.. esp with allergies.. i think now its just outdoor stuff cause the tree pollen is so high here... i dont have any digestive probs or rashes..
