Fall is here and winter is fast approaching.  Thought I would share a great potato soup recipe given to me by a friend.  If any of you out there have good soup recipes, please share.

Potato Soup receipe from Max & Erma's:

4 oz bacon, cut into 1/4 inch pieces
1 small yellow onion, 1/4 inch dice
1 1/2 ribs celery, 1/4 inch dice
1/2 cup flour
4 cups chicken broth
3 cups potato, 1/2 inch cubes (about 2 medium baking potatoes)
1 cup half-and-half
1/4 teaspoon ground white pepper
1/4 teaspoon ground black pepper
1 tablespoon salt (optional)
1/4 pound sharp cheddar cheese, grated
(for garnish - bacon, cheese and green onion)

Place heavy stockpot over med-high heat, add diced bacon. Cook, stirring frequently, until bacon is brown, 5-7 minutes.
Immediately add onions and celery and saute until soft, about 5 minutes.
Reduce heat to low and add flour to veggies and bacon. Cook over low for 5 minutes to cook out the raw flour taste.
Add chicken broth and potato cubes. Increase heat to med-high and bring to a boil.
Cover, reduce heat to medium and cook for 20 minutes, or until potatoes are tender.
Add half-and-half, white and black pepper and salt and simmer for 5 minutes more.
Add cheese and stir until melted. Taste and adjust seasonings.
Garnish with crisp bacon, grated cheese and diced green onions if desired.

We just had a crock pot cook off competition at work and this was a big hit!
Its an old family recipe that I love to make every winter and also freezes well if you make too much!

Cabbage Patch soup:

Brown 1lb of beef, cup or two of celery and 1 onion in frying pan. 
While cooking put in crock pot:
1 can green beans
1 can of corn
1 large can of crushed tomatoes
2 cups of beef broth
Cut up a couple carrots
Cut up a half head of cabbage
1 can of kidney beans

Add the beef, celery and onion.

Add pepper, chili powder and salt. (to your liking)

Cook for a couple hours pending on your crocking pot (mine has 4, 8, 10hr settings)

You can also do this on the stove if you would like a quicker meal!

Chickpea

This is a very warming soup for winter - the easiest lentil soup I know.

6 oz red lentils, washed and drained
1 onion, finely chopped
2 sticks celery, finely chopped
1 tbsp sunflower oil
3 cans V8 juice, or other vegetable juice
1 tbsp veg stock powder, or 1 teasp marmite or other yeast extract
Add seasoning - salt, pepper, spices - at the end to taste.

Saute the onion and celery gently in the sunflower oil until soft but not brown.  Add the lentils and stir.
Add the V8 juice and stir well.  Add the stock powder or marmite.
Slowly bring to a gentle simmer, stirring regularly so that it doesn't stick.
You might need more liquid depending on how thick you like your soup - use water to thin.
Simmer for around 40 minutes until the lentils are soft and mushy and the soup has a good texture.  Or for 3-4 hours in a slow cooker/crockpot.

This is even better made ahead of time and reheated.  You can add any vegetables you like, or spices like cumin or nutmeg.
