Title: What's cooking at your house?
Post by: Bucky on September 13, 2012, 08:26:09 PM
I had another thread with this same title from last year and we got a lot of replies and recipe ideas.  Since that thread was 14 pages long, I decided it was time to start a brand new thread.

I haven't wanted to cook much this summer since it was so hot, I didn't want to add to the heat by heating up the oven and making the kitchen hot.  Now that cooler weather is here, I will be using the oven more.

I'm also looking forward to using the crock pot.

Earlier this week I got out my George Foreman grill - which I haven't used in quite a while.  Mmmmm, the pork was soooo good grilled on that.  The only downfall of this grill is it isn't the easiest to clean since the grates don't come out (some of the newer models DO have removable grates) and you can't submerge the grill in water.  I've found that wet paper towels closed on the grill for a bit help to loosen stuff.  Next time, I'm going to use aluminum foil and see how that works.

Tonight, I made a big pot of chili.  Yum . . . hit the spot!   ;D

So, what's cooking at your house?

as a snack I spread melted chocolate on graham crackers, let cool. Then spread peanut butter on it and make awesome snack cracker sandwiches!

oh, and breakfast this morning we made oatmeal and put shredded coconut and dries apricots in it, my daughter loved it  :)

One of my friends had an overabundance of jalapenos so I've been fixing jalapeno poppers all summer!

12 jalapenos, halved, with seeds removed (use gloves so you don't accidently touch jalapeno juice to your eyes!)
1 package cream cheese, nice and cold so it's easier to cut
1 pkg bacon, the cheaper the better, cut in half crosswise
optional: shredded cheddar cheese

Press what my first mother-in-law would call a "knob" of cream cheese into each jalapeno half, filling it well. When I have shredded cheddar I put it into a bowl, put the stuffed jalapeno in cheese-side-down and press cheddar into the cream cheese. Wrap the pepper in the half-slice of bacon -- you can stretch this around a time and a half and you won't need any toothpicks.

Bake in a 350 or so oven for about 30 minutes or until the bacon is good and crisp. Surprisingly, the creamcheese mostly stays put.

Last week I cooked a beef roast all night in the crock pot.. Then that morning I dumped it all in a large baking pan added potatoes, carrots and onions and baked it until the veggies were done.. I don't really care for it that much but my hubby and son love it..

What I like is I take the left overs and shred the beef, pour it all in a large pot add everything except the kitchen sink,   ::)  like diced tomatoes, corn, blackeyed peas, lima beans, more carrots and potatoes and anything else I think might be good and I have a huge pot of soup.. It tastes so good.. :)

I rushed the season a little bit last week and made some really good chili. I always grate some semi- sweet chocolate in my chili now and it really adds a new dimension to the flavor. The peole at the chili cook offs in Texas are known for this.

This week I had a big package of beef stew meat in the freezer and I cooked it in the pressure cooker. I then cooked homemade vegie soup on top of the stove instead of using the crock pot.

I used carrots, potatoes, onions, peas and cauliflower. Generally I add rutabagas or sweet potatoes but I didn't have time to cut them up. I like to add dried parsley and dill to my soups and whatever else strikes my fancy. I used some strained beef broth (I use cheesecloth) and a some beef bouillion plus a 15 oz can of tomato sauce. With a bigger batch of soup the tomato adds just enough flavor that isn't overwhelming. When my soup has gotten hot I will add sugar and stir well. The sugar really sets off the flavor in soups. Good cooking folks. Irish

Well...you didn't want to eat at my house last night. I'm house sitting for a friend, so now I have in my charge 2 basset hounds, a corgie, some sort of spaniel, a parakeet, and a neurotic cat. Anyway, tried baking just two potatoes last night.

With all the commotion, I forgot them in the oven @450 degrees and went to bed with them on. So glad the house didn't burn down. Anyway, it smelled like cookies baking this morning when I got up and couldn't figure it out. Then when I walked by the oven and felt the heat - oops, there it was.

I pulled out two feather light, but hard as rock potatoes from the oven.

At least now I have something to throw in the back yard for the dogs to play with.

That my friends, is sjoggie brain style cooking.

Oh, if you're wondering how I could forget my dinner like that, I ate a bowl of cereal to hold me over while the potatoes were cooking - guess it held me over all night. HA!

Oh well, today's another day. Maybe I can make something magical like you gals today.

My version of a BLT is a BCT (Bacon Cheese and garden fresh Tomato). Lettuce is what food eats.

Cobbler, Mom style!
1 cup flour
1 cup sugar
1 cup milk
1 stick butter/margarine, melted
2 tsp baking POWDER (it tastes really, really, really bad with baking soda...)

Mix the above in a 2-quart glass casserole dish. Dump in a can of fruit, preferably cherry. Anything tartish works, too sweet doesn't. Forget pears, strawberries or sweet apples.

Bake at 325 for about an hour, until the cake portion rises and a toothpick in it is clean when removed.

Mom put some white sugar on top, and it is wonderful with vanilla ice cream!

I always make that with canned peaches, slccom.. I never bothered to put baking powder in it though.. I just melt the butter in a rectangular cake pan, mix the flour, sugar and milk and pour it on top.. Then I squish up the peaches and drop them all over it and pour on the juice and bake it.. It taste great..

I've made that cobbler, too, using Bisquick instead of flour and baking powder, and a can of peaches. Cherries sounds so yummy!

Thanks for the post!

I have to tell you that I made some gluten free banana bread a while back and accidently put soda in place of the baking powder. I knew while I was putting it in the pan that something didn't look right. Oh my gosh, was it ever terrible. What a difference that mistake can make!!!!

Had to throw 2 loaves in the garbage. Irish

Today I made baby golds with leeks and baby bok choy sauteed in garlic, Alder smoked sea salt, and pepper. Simple and delicious (and very difficult to forget about when cooking :J )!

Hi Folks--
This is my 1st time posting, and 1st time in Sjogren's World.  We had homemade Linguine and meatballs, Hot French bread and a green salad with vinaigrette.  Soooo yummy.  The best part is that everyone actually ate it!

Hi ohBeth7 - welcome!   ;D

Nothing brings people together like food - so we're glad you jumped in as a newbie on our food thread.

I've found I shouldn't read this thread late at night as it makes me hungry!  LOL

ohBeth7 - if you could start a separate thread and introduce yourself and tell us about your Sjogren's journey more people would see it and could welcome you.   :D

I hope you find this site helpful to you - it has lots of information here in both our Discussion Board, Helpful Links and our Social Board.  If there is a specific topic you are interested in, if you put that word(s) in the search box to the top right of this page it will take you to previous threads about that topic.  If you can't find what you're looking for, by all means, start a thread of your own.

Again welcome . . . and thanks for sharing your yummy meal with us.  Any leftovers??   ;)

I have been busy!

Homemade Chicken Noodle Soup for dinner

I will be making granola bars tonight (maybe tomorrow)

and I blanched 5 pounds of green beans to freeze (some I just steamed and pureed for baby food) and I am just starting to make pureed carrots for my son. Homemade baby food is so easy to do!

We have been playing with GF foods and having great results.  It is more expensive but we are both feeling better for it.  There are so many good receipes out there.  Also got some mixes online with free shipping from King Arthur that have been out of this world.  Made brownies last nite, mmmmmm added pecans and they were awesome!  Since they are pricey I immediately put some up in the freezer so that we would not eat them all this weekend and will have some later.

Thanks for the posts on peach cobbler posts.  There is GF bisquick thats not too bad, may have to try this one.

The other day, our 16-3/4 yr. old son and I were talking about food.  He mentioned that it seems rather crazy that when you go to the grocery store that you have to pay LESS money for items that have sugar and extra fattening ingredients in them, but you have to pay MORE money for the sugar-free, low sodium, healthy food!   :-\  Somehow, that just doesn't sound right!  (I know my boy is a chip off the 'ole block as I've thought this exact same thing on many occasions!)

You hear it on the news all the time and see shows on TV, you read it in magazines, etc. that there is an epidemic of overweight people here in the U.S.  Perhaps this could be a way for people to eat more healthy, charge LESS for the good stuff, and MORE for the fattening stuff!!   :D

Maybe we need to bombard the manufacturers with emails to this effect.   ???

Bucky, This is such a pain when we go shopping. The interesting thing is that many times the low fat, low carb, etc will have high calories or higher something or other than the plain ordinary product.

Example is the sugar free product that may not have sugar, but they have different types of ingredients that still make high caloric intake and occasionally quite high carb intake. The Light ice cream that I use is 30 calories less per 1/2 cup, but it is only 1 gram of carb lower. Just doesn't add up does it.

So the food manufacturers can't be blamed for it all as we, the consumers, tend to buy these things without always reading the labels. Also, should we talk the price of protein lately!!! Peanut butter and meat are getting so high. I watch all the women (including myself) wander around the meat department looking at all the meat and many times just walking off. I think they sell more chicken than they used to cause they are also going up in price.

Sooo, what did we have for supper tonight. Apple crisp and ice cream!! How is that for nutritious!! Irish ;D

Mmmmm, I love apple crisp, Irish!!  The only thing I remember about school lunches growing up is how good the schools apple crisp was!!   ;D

Irish, I know what you mean about the calories and sugar-free stuff.  My hubby is diabetic, so I buy him sugar-free wafer cookies and I have to remind him that yes, it is sugar-free but they DO have calories and he can't eat the entire package in one sitting!!

Tonight, leftover Arby's Roast Beef sandwich and I added tomato and lettuce.  Yum-o!!

Pork chops!!! Yum.   I have been so hungry for them.  Someone gave us some fresh black eyed peas.  Cook them with a little onion and bacon.  Think we'll have some fresh corn on the cob.

   Can't wait for supper time.

I made the gluten free apple crisp--2- 9 x 13 pans. Hubby and I ate much of one---I know I shouldn't cause I am off the metformin for a while. Can't wait to see what my AIC shows in a month!!!

I took the other pan of GF apple crisp up to son and family as son and grandson are GF also. They loved it. I took a load of GF banana bread also. I seldom bake or cook much of anything "normal" anymore. I buy all the GF flours and just sort of mix my flours as I go. I have been doing this for so many years that I don't use a recipe much anymore either unless it is some fancy thing.

It is fun to play around with GF cakes, bars, cobblers, etc. and the good thing is that when I have a major flop I can just dry the product out and grind into crumbs to use for crusts. It is spendy to cook with the GF mixes so it is nice to be able to make things home made.

The first trick I came up with for baking cakes with GF flour was to add a snack pudding to the cake batter. This adds a little extra flavor and sometimes changes the texture. I also add a little applesauce or a mashed banana.

My DIL has recently made one of the Betty Crocker GF cake mixes and added a snack pudding and she was able to bake the cake in the 9 x 13 pan and it had a much better texture and was less crummy. Tasted much better than just the directions on the box. Irish ;D

I bet there's been lots of cooking lately getting ready for the holidays.  What have you been cooking or baking?

Growing up, my Mom always baked all kinds of cookies at Christmas time.  She had one of those cookie presses and would make many different varieties of cookies.  She'd put the finished cookies into tins that sat on top of a cabinet and those were off limits to us kids - as these cookies were for company.

One evening, Dad got into the Tollhouse chocolate chip cookies - sitting in the living room enjoying a cup of coffee and eating cookies.  Then Mom came into the room . . . . uh oh!!  She was not a happy camper and let's just say Dad wasn't too pleased either as "he was the one working so she could make these cookies and if I want a cookie, I'll have a cookie!".  Funny how something that happened well over 35 yrs. ago is still fresh in my mind as if it just happened.

I've steered away from making lots and lots of cookies or goodies at the holidays as we would just end up eating them all ourselves - which we don't need.

Anyhow . . . what's cooking/baking at your house?

Tonight for dinner I made one of my hubbies favorites - ham and beans w/cornbread.  Yum!

Hi  :)

Due to broken arm I haven't cooked anything since August. I feel so sorry for hubby today as he is struggling to make a Christmas meal for me, son and partner but he's not feeling too good. His stomach is playing up. Son's partner is not feeling too good. She has a stinking cold. Still - the roast is in the oven. Not sure exactly who will actually be eating later!

Take care - Scottie  :)

Well I received a fabulous new Italian cookbook for Christmas from my son so tonight we will have: Pollo Al Limone. I am excited, we will cook together. I can do so little these days. My husband will go to the store to get the ingredients for me.
So Bon Apetite everyone. CK
