Hi - does anyone have a quick and easy banana bread or muffin recipe you use? I've got some bananas that need to be used up and don't want to waste them.

I have one that I use that is in my 1977 Betty Crocker cook book. It is delicious.If you need it I will post it.
My 1977 cook book was a gift to me at Christmas from my younger sisters. The poor thing is falling apart, burned, stained, the binder torn,etc....but the memories associated with it...I just can't retire it.

I have my mom's 1950 Betty Crocker Cookbook (she received it as a wedding gift) - I'll look in there under banana bread.
I have some earmarks in my own Betty Crocker Cookbook dated from the 1970's and yes, it's seen better days, but it's a keeper! ;)

I make the ones on Allrecipes.com called Banana Muffins II http://allrecipes.com/recipe/banana-muffins-ii/Detail.aspx. I add a teaspoon of vanilla to the batter as other reviewers suggested and I love them! They rise well, too. My kids love bananas so much they'll eat them green :o so we never have any sweet delicious spotty ones unless we hide them from the kids :P

Bucky, I suppose I'm so late that your bananas would have rotted waiting for my post, but I have a good recipe, too, if you'd like me to post it!
You can also freeze overripe bananas in a ziplock bag. I recently tried it and the bread turned out fine.
So, how did the bread come out? And most importantly, is there any left to share? :D ;D

Mmmmmm . . . take a deep whiff . . . fresh out of the oven banana bread!! ;D
Every time I "thought" about making it the last couple of days I'd look through my ingredients needed and see that I either didn't have something, or what I did have, was very old and needed to be replaced. So . . . had hubby stop at grocery store on his way home from work for the ingredient that needed replacing (didn't want to make a special trip to the store - so had him stop as he drove by it on the way home from work), and I got 'er done tonight!
It's still cooling off right now - smells yummy! I went with Betty's recipe (as in Betty Crocker). I probably could have taken it out of the oven a little sooner as it is quite brown - but, it isn't burnt. :D
Mmmmm . . . guess what I'm having for breakfast?? (might have to sample a little taste tonight ;))
