Last year there was a thread - "What's for the evening meal at your house?" - that was interesting to read.
Many times, I feel like my family is eating the same 'ole thing over and over at our house. I would love to get some ideas for quick, nutritious meals to fix for my family.
With our hot, hot summer - I didn't use our oven very much for cooking meals. Now that cooler temperatures are here, I'm going to be using the oven more. :)
I'm also looking forward to using the crock pot.
This past week I made a meatloaf for dinner one night along with baked potatoes and green beans. We haven't had that in quite a long time. It was really good, if I say so myself. ;) As leftovers for lunch the next day - it was just as yummy.

Tonight Jan made poached eggs and hash browns with minced garlic and onions.
Sweet and sour pork, stir fried broccoli, spring rolls, rice, and the last of the homemade apple pie. ;D
Folks, here we go again. Joe just brought up something that I ate a lot when I was a kid. Those poached eggs are so good with hashbrowns. They are also wonderful with corned beef hash.
Tonight we had homemade spaghetti sauce with browned hamburger---I don't make the meatballs cause we like it better this way. Hubby has to have a gluten free spaghetti and me the regular stuff so that takes longer and more fuss.
I also made cauliflower with cheese sauce as we needed a vegetable, We are now on the downway trail cause hubby is having colonoscopy on Monday. So, no vegies or anything much with fiber.
I enjoy hearing what people are eating cause I, too, just totally lost my desire to cook this summer and am having a hard time getting back into the habit. Time to cook some squash with my pork loin chops tomorrow nighth. I also make baked potatoes in the oven. I scrub them well, pour olive oil and coarse gound pepper over them. Wow, this is the best!!! I eat my potatoe skins plus my hubbies. Irish
Anybody have good stir fry recipes??

Tonight was baked chicken, baked potato and green beans.
Our pregnant daughter has changed from the girl who ate a cheeseburger or pizza everyday a few years ago into Mrs. Healthy Cook. 8) She called as I was fixing our dinner and said she was making baked chicken, mashed potatoes and fresh green beans. Gee, do ya think we think alike? ;)
It's turned chilly tonight so think tomorrow is for making Baked Potato Soup. The kind with some Velveeta in it, green onions and a bit of bacon crumbles on top. Yummy...some french bread and a spinach salad and we're good to go!
Boring meat and 3 veg here.
But my favorite winter recipe is Lamb shanks and gremolata with lemon couscous.
Meld your dinner sounds great, I would come to your house but its a bit too far.I also can't remember the last time we had meatloaf.

I have a love - hate relationship with this topic. I love to hear about all the foods but I hate not being able to sample.
We are having a pizza created by a teenage boy who entered it into a contest and won. Mind you, I'm not allowed to have pizza with my no fructose diet but one has to have some joy out of life. It is the best pizza we've ever had and dad's favorite. One of the things it has is the three different peppers cut up - red, green and yellow.

Today at a garage sale I bought for a cookbook for $1:
The Diabetic Four Ingredient Cookbook. This cookbook looks brand new. My husband is diabetic and eats all the wrong kinds of food. I'm hoping to find some good recipes in there that will be more healthful for him and our family. I told him to look through the cookbook and flag things that sounded good to him and I would try and make them. With four ingredients - doesn't sound like too much could go wrong with that! ;)

If I can find a whole chicken that is not too big (they are on sale here now), I buy one, stuff it. I use all the leftovers from it for stuff that week: Like chicken & noodles, etc. I usually can finish it off. I'd like to get beef more often but it has gotten expensive. If I do get it, I usually stretch it out with beef and noodles which I make great!
I've gotten a taste for baby carrots this year so have been buying and freezing them to use later. I "try" to get stuff on sale and freeze it for later but it doesn't always work expecially since there is just me.
Like your cookbook. They usually call for a bunch of ingredients you are only going to use once and they it sits in the cupboard for the year useless. The only seasonings I buy at the store are: salt, pepper, bay leaves, sage, onion and rarely cinnamin. Not adventurous I guess.

The lamb shanks are really good they are done in red wine tomatoes garlic onions carrots potatoes rosemary and beef stock, The Gremolata on the top is made of flat parsley garlic capers and lemon zest. Its very tasty and its a weight watchers recipe.
No your right it wouldn't travel well :( you never know one day i might get over to your side of the world.

I started using www dot all recipes cot com. I was in a HORRIBLE rut. This site has tons of easy stuff as well as Gluten free recipes. I can use the menu planner to plan for the week and it also makes a shopping let for me. Ive made chicken chili, Stuffed cabbage rolls, this AWESOME salad called That Addicting Salad, And these AWESOME Chicken puffs. Easy peasy recipes and it's all planned out for me.
I didn't know whether this is allowed, if it's not the mods can delete it.
PPP (3 PEPPERS AND PEPPERONI) PIZZA
One 12" prebaked pizza crust
1/2 cup Italian-flavored tomato sauce
2 cups sliced pepperoni
2 1/2 cups shredded, mozzarella, divided
1 medium red bell pepper, sliced
1 medium green bell pepper, sliced
1 medium yellow bell pepper, sliced
1. Preheat oven to 400F.
2. Place pizza crust on pan. Spread tomato sauce evenly over crust.
3. Arrange pepperoni slices over sauce. Top with 1 1/4 cups of the mozzarella. Arrange sliced peppers over cheese. Top with remaining 1 1/4 cups mozzarella. Bake for 35 to 40 minutes. Makes 4 to 6 servings.
Bran Muffins
2 cups Kellogg's All Bran) soak
2 cups boiling water )
Cream 1 heaping cup Crisco & 2 cups sugar
Add 4 beaten eggs 5 c. flour
1 qt. Buttermilk 5 tsp. Soda
1 tsp. Salt
Then add bran mixture & buttermilk, then dry ingredients, plus 5 more cups of bran. It's best if it stands before baking. Keeps up to 3 weeks in refrigerator. Bake at 375 degrees,
about 25 minutes.
Breakfast. Yum! So much fiber it is hard to be constipated.

Yep, that is the correct time.
A friend came over to help us clear blackberries and we took a break for lunch. We had Cuban black bean soup, baked butternut squash, ceviche (shrimps, avos, and some more exotic fruits), cheese, homemade applesauce, and fresh peaches. It's pretty cold here. There's lots left over for the week.
Last niht webhad ceasar baked chicken breasts with basmati rice and beets. Love beets!
Having hircht for dinner, kids having scrambled eggs.
Tonight is ham and scalloped potatoes with roasted Brussels sprouts.
I love to cook.

Velveeta Fudge
(This is half of the original recipe)
Melt ½ pound Velveeta and ½ pound margarine or butter, stirring constantly
Add 2 lb. pwd. sugar (1 pkg.) and ½ cup cocoa
(I add about half of the pwd. sugar before adding cocoa)
Add 2 tsp. vanilla & 1 cup chopped nuts
Pour into greased 8 x 10 pan (or don't fill 9 x 13 pan) No beating.

The fudge melts in you mouth. I have just a tiny sliver of a 1" square bar. My family and friend go back over and over it is soo good. I know that the thought of Velveeta sounds strange but it is "Oh so good"!
It looks and tastes like very rich fudge.
When my daughter was in high school we made a big batch of fudge for her to bring to teachers. It was super-soft and yummy. One teacher choked on a bit that slipped down his throat. He called it "Annie's Killer Fudge" after that. ::)
Here is my favorite cookie. My wife has never made them. Mom used to slice them just under a quarter inch thick to cook.
Coconut Ice Box Cookies
½ c. margarine ½ c. Crisco
1 c. white sugar 1 c. brown sugar
2 eggs 1 tsp. vanilla
1-1/2 c. flour 1 tsp. soda
1 tsp. salt
Mix above ingredients. Grind fine ½ c. coconut & ½ c. walnuts and add to above. Then add 3 cups oatmeal. Separate into 2 rolls. Freeze. Slice and bake at 350 degrees. One roll makes 2 cookie sheets (I only do one at a time)
Toniht is pulled bbq pork sandwiches and broccoli and carrots.
Coconut icebox cookies sound wonderful!

I was flipping through that new cookbook today and this sounded pretty good:
Apple Coleslaw (my family won't eat it, but it sounds good)
2 Cups Cabbage (shredded)
2 Medium Apples (cored, diced)
1 Can (16 oz.) Crushed Pineapple (drained)
3/4 Cup Fat Free Mayonnaise
Combine above ingredients, cover and refrigerate 1 hour or more before serving. 8 Servings.
Serving Size: 3/4 cup
Calories: 60

No, don't think I've ever used Hungarian Paprika. I'd be willing to try it because we love experimenting with spices. Have some smoked paprika but that's best with any kind of grilled/BBQ.

Honey is honey. However, I keep mine in the cabinet next to the oven so it's never room temperature when I need it. There was a catfish place over in north Texas that used to take raw biscuits and quarter them, fry them, and then dip them in regular sugar. You'd get a batch of fried catfish, coleslaw, and those biscuits. Mmmmmm...
Homemade burgers with ground chuck piled high with grilled sweet peppers, onions and a slice of tomato.
Baked sweet potatoes with lots of cinnamon, butter, and honey.
Owww! I have a tummy ache from all that cherry pie! :P
Rib roast, potatoes and vegetables. Possibly garlic toast.
I had mini quiche (ham,cheese, broccoli and mushroom) and water for lunch, kids had french toast.

Peel and cook potatoes. Mash them
Hardboil a couple of eggs and peel them.
Cook some smoked fish and some white fish in milk. Drain (keep the milk) and roughly flake the fish.
Make a white sauce and put the flaked fish and chopped hard boiled eggs into it. Season to taste. Smoked fish is often quite salty but it's nice to add pepper.
Put into a casserole dish and smother the top with mashed potato. Oven bake until the potato browns on top.
Variations: add lightly fried onions to the white sauce mix. Use prawns as well as fish. Use sweetcorn in the mix. Grate some cheese on top of the potato and let it melt in and brown up.
Yum. ( and it's easy to swallow because it's 'wet'.)

AAHHHHHHH!!!!! That's the same as my shepherds pie except you use fish and I use ground beef!! I would've never thought to use fish! I use ground beef plus any leftovers from the week and then top with potatoes. I'm giving your fish pie a try!!

We have BritCon next September. How do you make Bangers and Mash? That is one of the dishes that our British guests have asked for. The other dish is bread pudding.

Sausages and mashed potatoes with a rather rich onion gravy. I've made this one before and it's a huge hit with me hubby!
It sounds like the gravy is the key. Do you have a recipe for it? I'm a dumb man that does not know how to cook.

I FINALLY got around to making the potato soup today, like I meant to about 2 weeks ago. It's chilly and rainy here and it tasted great. Yummy!

The secret is trying to cut calories!! Sometimes I used kielbasa, sometimes chicken and apple sausage, Sometimes HOT sausage. Depends on your tastes that day. ALWAYS ALWAYS ALWAYS REAL MASHED TATERS!!! None of this boxed stuff unless you just don't have energy. For the gravy, I use a beef broth mixed with milk and flour. I saut? onions and then pour the beef broth in; mix the flour in cold milk to prevent clumping and get the onions and broth boiling. Pour in milk and stir CONSTANTLY and lower flame to low medium. Once it starts to thicken, turn fire off and keep stirring. I like ti slice up the sausage before putting it on the taters and then add gravy on top - a lot of gravy. This is a bowl meal for us. You can try a plate but I think it works better in a bowl.

A fall day with the sun shining on our maple trees as they shimmer in the sunshine with the pretty reds. Looking out the dining room window there is a mix of yellow (color was waaaay too bright for the eyes to highlight it in yellow on this forum ;) ) and orange trees in the woods. Ahhhhhh, fall - love it! :D

1/2 baked potato
slice of pork roast, shredded
small handful of shredded cheddar
teaspoon of sour cream
barbecue sauce
Pop it in the microwave and voila! Delicious!
Meld, We think alike. I made home made potato soup on Wednesday and it was so good. Had a the last of it for lunch today.
I make mine with boiled potatoes in a dutch oven--then I mash up half the potatoes with milk and butter til almost on the thin side. I cut up the rest of the potatoes and add to the potato base. I then add minced onions, slat and pepper, dill weed, parsley flakes,etc and whatever else I am in the mood for.
That day I had some cooked up bacon in the freezer and I cut it up in pieces and added it plus when the soup got warm I added the shredded cheddar cheese. I usually shred up a carrot and nuke it till done and then add that to the soup and later on add the frozen peas. I cook it on the stove in the dutch oven and cover it making sure to stir it often. Even on low the soup will want to come to a boil and need to prevent it from burning.
When it is almost done I will taste it and add some sugar which kicks it up a notch!!!! This is the gluten free way of making potato soup. I also have made cauliflower/broccoli soup this same way. Really is good and a much different flavor from the other potato soups.Irish ;D

It was really good! They have been selling rib roasts for dirt cheap around here and so we have been enjoying them often 8)

Irish, I guess we do think alike. I love making potato soup a few times when it starts getting cold outside.
I boil potatoes and drain them; add some milk, chicken broth and half&half. A chunk of Velveeta cheese and some canned cream of celery soup. Chop some green onions, and throw in some cooked bacon or the real bacon bits in a jar.
I keep some of the potato chunky, and then when serving, add a dollop of sour cream and more green onions. Maybe a bit of shredded cheddar. It ain't low-cal, I'm sure, but it is soooo good. :D 8)
A green salad and a piece of Italian or French bread and we're good to go.
I haven't cooked much in the last week, so today I'm working on some lasagna!
Our 23-yr.-old daughter is pregnant and had major morning sickness. I feel so badly for her. I never dealt with that. She's given the cooking over to her husband because she can't stand to look at or smell food cooking. Her sickness got so bad she couldn't keep anything down, and I was getting really concerned for her.
At her ob/gyn appt. Thurs. they put her on promethazine, thank goodness. She had gained 7 pounds from her 5 weeks-9 weeks appt. and now lost 10 pounds at her 13 weeks appt! And she was thin to begin with.
The first pill she took helped. She's been trying to eat so healthy but she wanted pizza so bad and was able to eat some yesterday. She said it was "awesome greasy goodness". ;) She's tried so hard to do everything right with her pregnancy; let's hope she can begin to get enough food and liquids in her again!

I can't believe that people from the UK are asking for our national dishes of bangers & mash and bread pudding when they're visiting you! Surely they want to try your food? There are a few secrets for the perfect bangers and mash:
make sure the sausages are well cooked so they're browned and maybe a little split open;
the gravy is best made with lots of fried onions which are sprinkled with flour. Then you add beef stock with a little red wine, and simmer for a few minutes to thicken;
the mash should be made with floury old potatoes, boiled and then mashed while warm with butter and lots of black pepper.
There are restaurants here in the UK that serve only bangers and mash with lots of varieties of sausages, gravy and mash. Great food for teenagers!
Here tonight we're eating spankopita (spinach pie), potato and sweet potato bake, beetroot salad ... followed by apple and raspberry crumble with custard. My daughter's home from college which explains the feast!

Joe, Just a quick note here concerning Jan. I take it that she is getting along ok following her surgery. At least I am assuming she feels pretty good if she is able to make home made muffins. Just hadn't heard much on her condition lately. Hope you are both doing well. Irish ;D
Steak fajitas last night. Made it out of flank steak. I also found a good tomato & zucchini casserole for our veggie but was so good we could have had it for our main course!
Pecan encrusted talapia and long grain and wild rice. Thick, moist fish filets that were sooooo good, didn't get much rice in my system they were so filling. Tonight, jamaican jerk salmon.
We just got a hard dumpling recipe from my cousin. I am hoping for chicken and dumplings. The fluffy dumplings that most make just do not taste right.
There's a girl in my office who's a fabulous cook. She makes us lunch -- for all of us! -- about three times a week.
Today she is making roasted pumpkin soup. Yum!

I remember when I lived in Arizona back in 1980, there was what we called "roach coaches" that stopped at the business industrial park and you could go out and buy lunch from these trucks. The companies didn't have vending machines or anything, so you either had to bring your lunch from home or venture out somewhere to pick up a bite. This truck traveled to each company and stayed for something like 15-20 minutes and then moved on.

I try to pay her $20 a week, but I sometimes forget. :-[ She never asks for money, and I don't know whether anybody else pays her.

Tonight, "mess." I take leftovers and mix with pasta and either spaghetti sauce or cheese sauce.
Take and bake pizza with apple pies. I wanted chicken and dumplings.
Well today the kids and grandkids are coming over and I am making a broccoli and ham braid (Pampered Chef recipe) and some hash browns.
I have been promised chicken in dumplings on Thursday for supper. Tonight is bread and water again. Maybe crackers, cheese and summer sausage if I am up to that.
It sure would be nice, now and then, if my family would say, "what do YOU want US to fix for dinner tonight?" instead of the usual . . . . "what's for dinner?". Sigh
Although, on the rare (very, very rare) occasion when they DO decide to "cook" - it usually involves getting a mass number of pots and pans and dishes out. Of course, they never clean up the mess afterwards. ::) Sigh
A bowl of cereal sounds about right up my alley tonight. Quick and simple.

I could smell something cooking in the kitchen a while ago. "Oh yeah! Someone's making me supper! How nice!" Nope. They cooked something for themselves. Something with gluten that I can't eat. >:(
So I'm making some pasta for me, myself, and I. And for dessert, my homemade gluten free banana bread.
It was such a sunny day we grilled steak with lots of mushooms & onion. I made twice baked potatoes. Yum. Carie

Joe, You are toooo funny. Bread and water---that is probably what my hubby thinks I am cooking.g I have not felt good all summer and I lost my desire to cook about the same time. One day this summer he came in for lunch and there were no leftovers in the fridge and I hadn't made any lunch.
Sooo, the old standby was fixed again!!! Grilled cheese (on gluten free bread for him) and peach sauce. I thought it was just great on these hot summer days and we had that at least once a week all summer.
Tonight I cooked some venison chops for hubby. He didn't get a deer but the son did and the guys cut up 2 deer today. Hubby was given some meat for supper. I had a little frozen pizza and baked chicken for tomorrow night. We ill be gone to cities for hubbies pulmonology appt tomorrow. Maybe we will come home with an order for oxygen for him. I really am hoping!!!Irish ;D

Joe, you are funny. Poor guy; bread and water. You sound like my husband and his love for chicken and dumplings. His grandmother made the very best! It's sort of a tradition in SE Kentucky, I think. Everyone's "mamaw" seems to make the best biscuits or the best chicken and dumplings. I hope you get some dumplings by Thursday!
I do not like the soft fluffy dumplings. I like the hard dumplings. It took forever to find the recipe. I found out that my cousin had it. (Moms recipes and legal papers disappeared when she died.)
I did have bread with jelly on it last night, 2 crackers a slice of cheese, and a cereal bowl of pop corn. While watching the blue ray edition of "Star Wars" chapter 5.
Last night ----- Breakfast for dinner! I love pancakes with real butter, and honey instead of syrup.

I made borscht and potato soup yesterday (two different pots.) So we have several extra quarts to heat up in the fridge.
Tonight we are having lemon rosemary chicken, roasted yellow greek potatoes and broccoli. Sounds intensive but it all goes into the oven but the broccoli.
Joe I am Canadian (from the prairie) but we call those type of dumplings Klimps. My Mom would make them. Just flour and milk to a dough, and put on a piece of stewed chicken. That is a really easy meal, wish I could make you some. I love to cook, hate my tiny kitchen and no cupboards though. My family hates stewed chicken but it is so easy, nutrious and delicious.
This is the recipe that I got from my cousin Suzy.
Hard dumplings
Mix together:
2 eggs
water equal to the 2 eggs
salt
pepper
1/2 tsp baking powder
Add flour until stiff and sticky
drop by tsp into boiling water
dumplings are done when they float and look white

Joe, They don't have any shortening or oil in them so that is why they are hard. I bet they are good though.
I do cold cereal a lot at night and really like it. Also, anyone every do french toast with peanut butter and syrup with some cinnamon sprinkled over it?? Yummy!!!Irish
Tonight I am making Cottage pie using a recipe from Scottish Slimmers - I am trying my best to loose a few pounds. Last night my hubby cooked butternut squash risotto, and white chocolate bread and butter pudding. I will have to be supergood for the rest of the week ;D
I went grocery shopping at the weekend and bought lots of ingredients so that I can eat healthy food from the book for the rest of the week.

Tonight - smoked salmon steaks, brussel sprouts, carrots and new potatoes.
Beef and broccoli stir fry w rice. I made cheese and onion monkey bread, and a carrot cake, and a couple of loaves of bread for the week for lunches for the kids and dh.
Now I have to clean up the mess ??? :o

I guess I'm in Thanksgiving dinner mode already. I put a small turkey breast in the crockpot today, make mashed potatoes, stuffing and a fruit salad. It was sooo good!
My daughter called and told me she made soupbeans and cornbread, and it was awesome.
Wow, I'm ready for a gastronomic tour of all the posters on this forum.
I used to love to cook, back in the day.
Now, not so much.
Eating, however, that's a whole NOTHER subject!

There was a recipe on the king arthur website for cheese pull apart bread. I would post the link but i am on my phone. I added an onion souce blend and a bit of sauteed onion. I was the only one who loved it though.
Next week we are having roast beef sandwiches. Those are my favourite, like a roast beef dip.

Chicken and dumplings seem to be Thanksgiving tradition at my MIL's house. Along with a few other time-consuming dishes like deviled eggs, waldorf salad and fresh cranberry salad. Think I need to start resting up for it now!
We had a pot luck BBQ on Saturday with some friends from college. I sat out in a T shirt because my body was so hot. The out side temp was in the upper 50's. I grilled about 40 pounds of beef so every one had left overs to take home. We had deviled eggs, potatoes, squash, and individual cheese cakes. Pure black cherry juice and Pepsi throwback were the predominant drinks.
My grand kids were here and they watched Cars 2 while having hot dogs instead of steaks or hamburger.

Sorry, I have been going to give you the recipe for this great cheesecake and forgot. Imagine that!!
This is called CHOCOLATE CHEESECAKE:
Makes on 9 inch cheese cake. I use a springform pan and it works great. If you don't have one check out the thrift shops.
CRUST
2 cups chocolate wafer crumbs--I used crushed cocoa pebbles as they are gluten free.
5 Tablespoons melted butter
FILLING
3 packages (8 oz) cream cheese room temperature
1 cup granulated sugar
5 large eggs
2 ounces or squares semisweet chocolate-melted
FROSTING
6 ounces semisweet chocolate, melted--can use chocolate chips
1/2 cup sour cream
Mix the chocolate crumbs and melted butter till blended--press into springform pan
Preheat oven to 300 degrees
Beat the cream cheese, sugar and eggs at medium speed til smooth and fluffy. Spoon half of cream cheese mixture onto crust.
Stir the melted chocolate into remaining cream cheese mixture till well blended. Drizzle over the batter on the crust making swirls.
Bake cheese cake for 50 minutes and transfer pan to wire rack to cool
Transfer cheesecake to a serving plate, cover with plastic wrap and chill for 2 hours.
Uncover and carefully remove from pan
Make frosting by mixing together chocolate and sour cream Spread over the cheesecake. Chill brieifly til frosting is set.
The picture I have shows the cheesecake frosted on top and sides plus they piped around the edge with the frosting and it looks so great.
I have added vanilla to the cream cheese mixture to kick it up a notch. I have also sprinkled it with colored sugar like you do with the cut out cookies at Christmas. You can let your imagination run wild. I have wondered how a little rum, almond or coconut flavoring would work.
Just cut very small pieces as this is very, very rich and very good. Our 3 boys snitch little pieces all day at Christmas. By evening the cheesecake is usually pretty much gone. Enjoy Irish

Last night I made a roast in the crockpot. The house smelled soooo good while it was cooking. It tasted just as good, if I say so myself.
I always felt bad for my Mother - my Dad never complimented her on her cooking. Never even a thank you for dinner, etc. My husband and son are always telling me how good something tastes. Our son will often tell me, "good job, Mom!". ;D

Nara, yes, the cheesecake is rich and sweet. Actually not as sweet as you would think due to the semi sweet chocolate which is little on the bitter side but really adds to the flavor. IRish

I'm catching up here.:) The recipe for Pumpkin Cheesecake:
CRUST:
1 cup graham cracker crumbs
1 tablespoon sugar
1/4 cup butter, melted
1/4 cup chopped pecans
FILLING:
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
2 eggs
1 can (15 ounces) solid-pack pumpkin
1-1/4 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
TOPPING:
2 cups (16 ounces) sour cream
2 tablespoons sugar
1 teaspoon pure vanilla extract
12 to 16 pecan halves
Directions
In a small bowl, combine the graham cracker crumbs and sugar; stir in butter. Press into the bottom of a 9-in. springform pan; chill.
For filling, in a large bowl, beat cream cheese and sugar until smooth. Add eggs, beat on low speed just until combined. Stir in the pumpkin, spices and salt.
Pour into crust. Place pan on a baking sheet. Bake at 350? for 50 minutes.
Meanwhile, for topping, combine the sour cream, sugar and vanilla until smooth. Spread over filling; return to the oven for 5 minutes. Cool on rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer.
Refrigerate overnight. Remove sides of pan. Garnish each slice with a pecan half. Refrigerate leftovers.
Nutrition Facts: 1 serving (1 slice) equals 230 calories, 15 g fat (9 g saturated fat), 70 mg cholesterol, 164 mg sodium, 20 g carbohydrate, 2 g fiber, 4 g protein.

This is fabulous! I brought one to my MIL's dinner a few years ago, and everyone turned up their noses until they tried a bite. Even the "cheesecake haters" loved it. :D

Today our office had our Christmas breakfast extravaganza! And OMG! There was a potato casserole with cheese and onions and lots of stuff with crushed potato chips on top. I had it for breakfast AND for lunch.

I was just sitting here at the computer and decided to get out my little (and I mean, little) pail of caramel corn we got at our company party this past Monday evening. You know how something sounds sooooo good . . . . then it's not?! ??? Well, that is the story in this case. It was sticky, gooey and sticking to my teeth. I look at the tag on it - "best if used by Feb 2011" ::) I threw the rest of it away. :(
Bet there's lots of yummy food / desserts being laid out this next week.

I just read your post about gluten-free things for your sister-in-law.
Because you won't be preparing gluten free all the time, it may be simplest to buy cake mix and frozen gluten free pizza crust. If you have a Save-on-Foods or Safeway in your town, they have a full list of all the gluten free products they carrying in their stores. If these are not options then contact Kinnikinnick in Edmonton. They ship all over North America.
It's so nice you are making some safe foods for her. My in-laws are very inconsiderate and have never even attempted to learn about Celiac...never might Sjogren's.
What's cooking at my house tonight? NOTHING!! ;D We're having my husbands side of the family Christmas tonight at his nieces house. So, we're all going out to eat beforehand. Yay . . . I don't have to cook it, serve it, or clean up after (or pay for dinner either) - certain family members always pick the tab up for the group as part of their Christmas gift to us all.
Now the dilemma . . . what to have, what to have?? ;)
For dessert later - a Dairy Queen ice cream cake to celebrate our sons birthday tomorrow and a nieces birthday on Monday.

My precious husband does most of the cooking, but for Christmas I will be baking a ham to take down to my parents where we will all be for dinner. My husband's birthday is also on Christmas Day.
I will be baking him a pineapple upside down cake this year. All previous years I would order him one to pick up. I always go out of my way to make the second half of Christmas Day just his birthday.
My son also has a birthday on Dec 21 so this is a busy month for me. My daughter in law's birthday is Jan 2 .
We go one day to my son's to celebrate his birthday, then my husband's on Christmas Day later in the Day, then my daughter in laws on her day.
I am glad mine is in the summer. lol....

I made my very first batch of snicker doodles. Thought I had hit a wall cuz I didn't have any cream of tartar so I punted and used baking powder instead. I'm so proud of myself! They're actually edible!! 8)
CArebear, Here is a very good recipe for Gluten free banana bread. I have made it several times and I almost think it is better than the regular banana bread.
Also, I mix my GF flour myself and don't always follow the same mixture. This time I had a couple of pounds of sweet rice flour, 1/2 pound of brown rice flour, 1/2 pound tapioca flour and 1/2 pound of potato starch flour. I was out of the regular rice flour so I had to substitute--although sweet rice flour is really very good in just about anything. It makes a good cream sauce or gravy also.
GF Banana Bread---1 loaf----I double for 2 loaves and it works fine.
1 1/2 coup white sugar
1 stick butter/margarine just softened not melted
2 eggs
Mix well and beat some with a whisk to get the lumps out as well as you can.
1 1/2 tsp soda
1/4 tsp. salt
1 tsp. vanilla
Add this to the bove mixture and stir well
3 bananas--ripened if possible---mash well. I have used them when just very soft and worked well.
2 cups GF flour
1/3 cup sour milk--I add vinegar to make sour. About 1 tsp to the 1/3 cup
I add the flour 1 cup and half the milk and then the rest of the flour and milk and beat well each time. At the very end I add the bananas and stir to beat the band.
Bake in greased and floured 5 x 7 pan at 350 degrees for one hour. It may take longer as you have to make sure that it is really done on the top. Have to get it very brown to be down. I let it cool for about 15 minutes, bang the pans hard to make sure it is loose and invert it on al. foil. I then loosely cover with al. foil and it gets nice and moist as it cools. Enjoy. Easy recipe. Irish

I got one little batch of gingerbread cookies baked. Need to make some molasses cookies to take to my dear old Daddy this weekend. He loves them and doesn't get much of that sort of thing at the retirement home.
He cracks me up. I was with him when he opened presents 2 years ago. Mind you; he's now 95 and has dementia. He got some books sent from my sister in Florida, and very nice clothes sent from my brother in Virginia.
He barely looked at all that, and tore into a box of chocolates and cookies I'd brought him, like a 2-yr-old! ;) 8)
We're trying pirogie pizza. Tomorrow, I'll be attempting Creme de menthe brownies. Couldn't find any Andes so I'm trying Ghiradelli's dark chocolate mint squares.

Basically Scottie, it's a sugar cookie dipped in cinnamon sugar.
We will be having a Christmas brunch buffet, ham as the centerpiece, plus a big green salad, biscuits, and fruit. We have so many sweets received from friends that we don't need another dessert! It's super simple to fix, and what most everyone likes to eat.
I don't eat meat, though, so I'll have a batch of homemade baked beans for myself. We found the very best beans at the farmer's market, called maya copa beans. Now I use them for anything that calls for dried beans.
And snickerdoodles are the best!

I got fast food from a loving family member who knew today was a low day. Tomorrow a community meal from our local Kiwanas (sp?) club and on Christmas Day I make the turkey (my special recipe) and my friends and family bring the rest of the food to a friends house for dinner together.
I usually cook as my honey cannot unless it is Top Ramen or steak. ;D I am teaching my kids to cook too. They make it fun and help not to think about the time and take my mind from my pain.

Jan is baking buns and apple crisp. We purchased some precooked shrimp for supper. I have never been able to get into eating oysters or clam chowder. So with Lobster and King crab beyond our budget, I will enjoy my shrimp.
I've got two loaves of banana bread made for the neighbors. Chicken Marsala in one cast iron pot for tonight and a slow cook pot roast in the other. I still have yet to make those Creme de menthe brownies but I'll get there...eventually...maybe...one of these days...probably... ;D
i just had pizza for dinner. Just seemed like the right thing for Christmas eve.
I made homemade pizza tonight. There's leftovers too - guess what we're having to eat some time tomorrow? (IF it makes it through the night without the boys getting into it! ;))

Well Murphy's law, everything went wrong this week. I've been flaring badly and couldn't move much. Due to some car trouble, I didn't get the groceries needed for the special Christmas Dinner I had planned, and I was really depressed about it! Last night, I got a good nights sleep, when I woke, found myself in brighter spirits and my fatigue lifted a good bit. I looked in the pantry and devised a plan to improvise and work with what foods we have on hand. But then, oh no!! Oven not working!!! I thought I might use the crock pot, but later had an idea to put a small fryer chicken in the bread machine and use the bake only setting, wonders never cease, it fit inside the bread machine perfectly. I'm adding some mashed potatoes and gravy to the menu, and there are plenty of frozen veggies in the freezer. When chicken is done, I will bake a cake and if my energy continues, some cinnamon raisin bread. We have Jello and frozen strawberries so that takes care of dessert. It will be a late evening meal, but we're night owls anyway and this works for us. Merry Christmas everyone! :D

Aww steph, it sounds like it's going to end up okay. These bread makers arent just for bread anymore, are they!! I'll have to remember that one. Enjoy!!
The pot roast was a hit. The asparagus...not so much. Got a red velvet cake made. Those brownies are just elusive.
Yaaay! Officially over the stomch flu. I got it Tuesday and was wondering if I could have Christmas dinner. Well Tummy has taken it ok as it as been over 6 hrs and no side effects. LOL 8) I have never been so thankful to be able to eat something.
I had stuffed chicken, baked potatoes, baked beans, hot rolls and I made my own mini choc cream pie with graham crackers, choc pudding and canned whipped cream the kind that squirts. The kitty crew had chicken too. Santa was good to me today. :)
Carl and I went out to dinner. I had the chicken and dumplings, he had the turkey dinner (I don't care for turkey). Great dinner!
Now I get to make turkey noodle soup from the carcase of the bird I made yesterday - that's a favorite, and of course, turkey sandwitches. Gonna be busy today, and actually feel up to it - yea! :)

I just made french onion soup. First time I've made it since going gluten free. Warmed us all up.
I used GF stuffing cubes & Gruyere cheese.
Mmmmmmmmm.
We are still eating leftovers...ham, scalloped potatoes, and candied yams. Yum. :D
Made turkey noodle soup! But the noodles kept slurping up the broth, so had to keep adding water. Turned out great. Made a big batch, so was able to share with neighbors and put some in the freezer for later. :)

The 'children' - 30, 27 and 23 - plus friends and partners have been home over the holidays and they've done most of the cooking. New Year's Eve they made a feast of Greek food: moussaka, spanakopitta, tabbouleh, lemon potatoes, baked butter beans etc. Whenever leftovers run out we make a batch of soup - I made a wonderful minestrone after Christmas - or a pasta dish. Tuna pasta bake with leeks and cheese sauce is still a favourite.
How did you all manage to have enough bread, OJ, milk etc over the holidays? However much we bought it was never enough. Clementines too - the bowl is full and within minutes it's empty!

Here it is the middle of February in Central IL and we grilled out yesterday!!! First time ever in February!!
Mmmmmm, food off the grill tastes sooooo good!!
We had marinated boneless porkchops . . . yum!
Hubby decided to do some "extra" food for his lunch this week - so, he grilled some burgers too. (Like it will make it until Monday . . ha!)
Only a little over four weeks until Spring is officially here . . yay . . . can't wait!!

Every year my husband and I gather dandelions for our "spring tonic" of wild greens. We take a five-gallon bucket around the yard and dig them out with our pocket knives (Well, his pocket knife. I'm the one with the bionic eye!) Then we come in the house and clean the mud off, then boil them in a tiny bit of lightly salted water like spinach and serve with a pat of butter.
It's been so mild here in East Tennessee lately that we had our tonic early! It was YUM! :D
Our next wild food will be tiger lily buds in May and June. They taste like a cross between green beans and asparagus.
Summer picnic food...hamburgers grilled, with potato salad and fresh green beans.
Spring is officially here.
I went downstairs at 5:30 am, and in the creeping dawn, I heard birds singing. We have birds year-round in El Paso, but they only sing in the mornings in the spring and summer.
Winter is over :)
Yesterday, on the Dr. Oz show they had an interesting recipe for a cake.
Instead of adding eggs and oil to your cake mix, you ONLY add club soda. I haven't tried it yet, but it sounds yummy.
Hungry Girl's Club Soda Chocolate Cake
1 box cake mix (I think you can use ANY flavor, they used chocolate)
1 (12 oz.) can Club Soda
Heat your oven to 350 degrees. Spray a 9 x 13 pan w/nonstick spray. Combine the dry cake mix and club soda until smooth. Pour into pan and bake until knife inserted in center comes out clean, 30 to 35 minutes.
Sounds so simple and reduces the fat in the cake.

Mmmmm . . . can you smell it?? I have a pot roast in the crock pot along with potatoes, carrots and onions. It smells soooooo good!! Hubby will be thrilled when he walks in the door from work and smells the wonderful aroma of this cooking. Shortly before we eat, I'll have to put a pan of green beans on the stove as the boys won't eat carrots . . . sigh! That's okay, more carrots for me!! ;D
With the outdoor temperatures climbing this week into the high 90's, low 100's (UGH!!!), I don't like to heat up the oven and the house. We have a grill, but it sits on the front porch (we don't have a deck or back patio :'( ), and gets all the afternoon sun . . too hot to even grill outdoors.
So, I decided to just put everything into the crock pot and let it slowly cook for several hours and it doesn't heat up the house. Yay!!
Now I bet you that my husband will say, "you know what would have made this meal really good? Rolls!". Tough beans, there are no rolls . . get over it!! LOL
Looking back at some of the earlier recipes and comments in this thread, I had forgotten about the one I posted about the club soda cake - it still sounds good ;), I'll have to try that! . . . but, not today.

Not much is cooking at my house lately. I am in a real cooking funk. But, I did discover something that is really good.
I used the store chicken breasts and tried to figure out what to put on them to change the flavor. I decided to use the spaghetti sause in the jar--the garden vegetables one. I added some sugar and stirred some up. Started browning the chicken breasts in the dutch oven and added the sauce over the top. Turned them to brown the other side and added the rest of the sauce. Cooked this covered and turning often. Got so tender and flavor really soaked in.
I didn't use all the sauce so the next night I mixed some into my hamburger and mixed it well. Made patties and fried them . Darn if they weren't good. Nice and moist and gave the meat a whole different flavor. Made a good sandwich in bread. Irish

If you like salsa, you can dump a jar of salsa on your chicken and let it sit in the fridge for a few hours. Then when you are ready to bake them, the flavors will have soaked in. I like to use a pan that just fits the chicken so the chicken cooks in a salsa 'stew'. Otherwise it spreads out in the pan and dries out. Bake them until done and then sprinkle with cheese (I like mozzarella and cheddar) and broil a few minutes. Really good and really easy!
Tonight hubby is making lemon chicken. The sauce alone is to die for! Just give me a loaf of bread and a big bowl of the sauce and I am a happy full girl ;D
